What was once Browns Restaurant on Zetland Road has now become one of Bristol’s most talked-about Vietnamese dining experiences—Saigon Kitchen. The transformation wasn’t just a renovation; it was the realisation of owner Trung’s long-held dream to create a vibrant, authentic space serving fresh, modern Vietnamese cuisine in the heart of Redland.
GRM Group was brought in at the very start to bring this vision to life.
Project Background
Trung had a clear, ambitious plan—to turn a tired, disused restaurant space into something warm, welcoming, and full of character. GRM handled the full build and fit-out from start to finish, translating Trung’s ideas into a practical, high-quality reality.
Phase 1 (2022)
In Phase 1 (2022), we transformed the former Browns site into a fully functioning kitchen and restaurant. Every part of the job was carefully considered—from structural changes to custom finishes, blending tradition and modernity with seamless flow between front and back of house.
Phase 2 (2024)
In Phase 2 (2024), we returned to deliver the expansion into the neighbouring unit, formerly a photography studio. This created space for an extended kitchen, more seating capacity, a private event area, and even a herb garden used in daily cooking.
Scope of Work:
- Full strip-out and structural modifications to former Browns Restaurant
- Electrical and plumbing works for commercial-grade kitchen setup
- Partitioning, finishes, flooring, lighting, and bespoke joinery
- External works, fire compliance, and rear access improvements
- Fit-out of newly acquired adjoining unit in Phase 2
Project Outcome
Two years and two phases later, Saigon Kitchen is a local landmark—its success built on strong vision and solid execution. The finished space reflects both Trung’s personality and GRM’s attention to detail: functional, welcoming, and full of subtle craftsmanship.
